Healthy Homemade Pea & Mint soup

Winter is fast approaching in the Northern Hemisphere, and this brings a smile to my face for 1 reason only; winter comfort food! 😉 Anything from Asian spiced stir-fries, Indian inspired curries, and hot hearty soups. One rainy day and one  big bag of frozen peas. The only thing I had on my mind was warm Pea soup.

Ingredients: [serves-4]

  • 500g x Frozen peas
  • 600ml x Vegetable stock
  • 1 x Onion, chopped
  • 1 x Garlic clove, crushed
  • 1 tbsp x Fresh mint, chopped
  • 1 tbsp x Olive oil
  • Black pepper
  • Salt

Use a large saucepan and start by heating the olive oil in the pan. Add the chopped onions & lightly cook until soft.

Pour in the frozen peas & vegetable stock,  and stir together. Bring contents to the boil, before removing the saucepan from heat.

Process the pea & stock mixture in a blender or food processor. Before starting the blender add mint leaves, a crack of black pepper, and a pinch salt [simply to emphasize the flavours.] Let the fun begin; blend the mixture at a relatively fast speed until smooth.

That is it! Pour the soup into serving bowls, garnish with mint leaves and extra virgin olive oil. Extra lean, filled with nutrients from the peas and a fresh healthy meal.
